BRIEF RECIPE:
BOIL THE MUTTON - IN KADAI- ADD OIL- ADD WHOLE GARAM MASALA-FENNEL SEEDS-CURRY LEAVES-ONION(GOLDEN BROWN)-GINGER GARLIC PASTE-TOMATOES-SPICE POWDERS-BOILED MUTTON-MUTTON STALK-COOK TILL DRY-GARNISH- SERVE HOT.
RECIPE INGREDIENTS:
- MUTTON- 1/2 KG
- ONION - 2 LARGE SIZED(finely chopped)
- TOMATO - 2 MEDIUM SIZED(finely chopped)
- GINGER GARLIC PASTE- 2 TBSP
- CINNAMON- 1 MEDIUM SIZED
- CARDAMOM- 2
- CLOVES- 2
- BAY LEAF-1
- PEPPER CORNS- 1/2 TSPN
- FENNEL SEEDS- 1 TSPN
- CURRY LEAVES- ONE STRING
- TURMERIC POWDER-1/2 TSPN
- CHILLI POWDER-1 1/2 TBSP
- CORIANDER POWDER- 1 TBSP
- GARAM MASALA- 2 TSPN
- CUMIN POWDER-1 TSPN
- SALT - AS PER TASTE
- CORIANDER LEAVES- FOR GARNISHING
DETAILED RECIPE
PRE-PREPARATION:
- Clean and wash the mutton pieces. Boil them for 3-4 whistles adding some turmeric powder,water and ginger garlic paste.
- Remove it once the pressure releases, drain the mutton pieces and retain the stalk.
HOW TO MAKE:
- In a kadai add in 2 tbsp of oil. once the oil is heated add in the cinnamon,fennel seeds, cardamom,cloves,bay leaf and peppercorns.
- once they get spluttered and the curry leaves and the chopped onions.
- Wait till the onions are golden brown.
- Now add in the ginger garlic paste.Saute till the raw smell goes off.
- Add in the chopped tomatoes to it and add some salt for the tomatoes to cook.
- Cover and cook for 2-3 mins.
- Once the tomatoes turn out mushy add the turmeric powder, chilli powder, coriander powder, cumin powder,garam masala to it.
- saute for 2 mins until the raw smell goes off.
- Add in the boiled mutton pieces to it and mix it well.
- To it add the mutton stalk and allow it to boil for about 10-15 mins or until the water evaporates.
- Allow it to cook in a medium flame for about 5 mins or until it becomes dry .
- Put off the stove.Garnish with coriander leaves.
- Yummy and Tasty MUTTON THOKKU/MUTTON MASALA DRY is now ready to be served with rice or chappathi or idly or dosa.
JUST A TIP CORNER:
You can reduce the amount of chilli powder and replace it with pepper to make SPICY MUTTON PEPPER DRY
