RECIPE NOTE:
Paneer is a fresh cheese common in the Indian subcontinent. It is an unaged, non-melting soft cheese made by curdling milk with a fruit- or vegetable-derived acid, such as lemon juice. Its acid-set form, (cheese curd) before pressing, is called chhena.
Paneer is prepared by adding food acid, such as lemon juice, vinegar, citric acid or dahi (yogurt), to hot milk to separate the curds from the whey. The curds are drained in muslin or cheesecloth
and the excess water is pressed out. The resulting paneer is dipped in
chilled water for 2–3 hours to improve its texture and appearance. From
this point, the preparation of paneer diverges based on its use and
regional tradition.

I have shared a Panneer Butter Masala which have quite a lot of modifications from the traditional recipe.
This is not the actual Panneer butter Masala recipe. I used to make it this waay and everone at home loves it .
So thought of sharing it with you.
The panneer i haves used in this recipe is the home made Panneer. I have used 1 and 1/2 litres of full fat milk to make it.
So here is the recipe , do try it and Have a feast!!!!!!!
RECIPE NAME :PANEER BUTTER MASALA
RECIPE TYPE : Lunch /Dinner
SERVES : 4
CUISINE TYPE : NORTH INDIAN(ORIGIN)

BRIEF RECIPE:
In a Pan - Add butter - Add Onions - Tomato - Ginger Garlic Chopped-Red Chilli- Cashews - Saute - Blend to smooth Paste- Take a Kadai - Add in Butter-Whole Garam Masala- Chopped Onions- Blend Paste- Salt-Sugar- Chilli powder- Garam masala- Cumin Powder- Coriander powder- Water- boil well- Add paneer- Cream - Garnish and Serve.
INGEDIENTS:
For The Masala Paste
- 2 Onions roughly chopped
- 2 Medium sized Tomatoes roughly chopped
- 4-5 Red Chillies
- 1/2 inch Ginger
- 4-5 Garlic Cloves
- 10 pieces Cashews
- 1/2 tspn of Butter
For the Gravy
- 1/2 cup Paneer cubes
- 1 small Onion Finely chopped
- 1 stick of Cinnamon
- 2 Cloves
- 1 Bay Leaves
- 2 pods of Cardamom
- 1 Star anise
- 2 tbspn of Butter
- 1 1/2 tspn Chilli powder
- 1/2 tspn Cumin powder
- 1/2 tspn Coriander powder
- 1 tbspn Garam Masala
- Salt (as per taste)
- 2 tbspn Cream
- Water as required
- Kasthuri methi for garnishing
- Coriander leaves for garnishing.
INSTRUCTIONS:
For the Paste:
- In a Pan add in some butter.
- Once the butter is melted , add in the Onion and saute for a minute.
- Now add in the Ginger and Garlic to it.Saute for a minute.
- Add in the Tomatoes and Red Chillies and wait it the Tomatoes are Mushy.
- Then Add in the Cashews to it.
- Put off the stove. Cool it and Blend to a smooth Paste.
For the Gravy:
- In a Kadai add in the butter, Once the Butter is melted add in the Whole Garam Masala Spices.
- Now Add in the chopped Onions. Saute until the onions are slightly brown.
- To it add in Prepared Paste to it and add in salt.
- Let the masala cook for 2 mins.
- Now add in the Chilli Powder, Cumin Powder, Coriander powder, Garam masala powder to it.
- Give it a good mix and wait till the oil seperates.
- Now add in some water and adjust the consistency. Now add in the Paneer Cubes.
- Let it boil for a minute or so and then add in the Cream, kasthuri methi leaves and the Coriander leaves.
- Put off the stove.
- Add in some Butter on top.
Yummy and tasty INDIAN STYLE PANEER BUTTER MASALA is ready to serve.
