ABOUT POTATOES:

Potatoes were introduced to Europe from the Americas in the second half of the 16th century by the Spanish. Today they are a staple food in many parts of the world and an integral part of much of the world's food supply. As of 2014, potatoes were the world's fourth-largest food crop after maize (corn), wheat, and rice.The potato is a root vegetable native to the Americas, a starchy tuber of the plant Solanum tuberosum, and the plant itself is a perennial in the nightshade family, Solanaceae.The potato was first domesticated in the region of modern-day southern Peru and northwestern Bolivia between 8000 and 5000 BC. It has since spread around the world and become a staple crop in many countries.

ABOUT CAULIFLOWER:


The word "cauliflower" derives from the Italian cavolfiore, meaning "cabbage flower".The ultimate origin of the name is from the Latin words caulis (cabbage) and flōs (flower).Cauliflower heads can be roasted, grilled, boiled, fried, steamed, pickled, or eaten raw. When cooking, the outer leaves and thick stalks are typically removed, leaving only the florets (the edible "curd" or "head"). The leaves are also edible but are often discarded.

Cauliflower is a popular low-calorie, gluten-free alternative to rice and flour. Between 2012 and 2016, cauliflower production in the United States increased 63%, and cauliflower-based product sales increased 71% between 2017 and 2018. Cauliflower rice is made by pulsing cauliflower florets followed by cooking the result in oil


Its a simple Aloo Gobi Masala Recipe. I am huge fan of this gravy and love to have it with butter naan.
I have adjusted the ingredients according to my taste. It came out really well this time.I am sharing my recipe here.

RECIPE NAME : ALOO GOBI MASALA
RECIPE TYPE : SIDE DISH
SERVES : 4
CUISINE TYPE :NORTH INDIAN
PREP TIME :


INGREDIENTS:

  • 1 small Onion Finely chopped
  • 1 Cauliflowe (cleans and soaked in hot water)
  • 1 big Potato (cut into cubes)
  • 1 large Tomato (made into paste)
  • 1 stick of Cinnamon
  • 2 Cloves
  • 1 Bay Leaves
  • 2 pods of Cardamom
  • 1 Star anise
  • 2 tbspn of Butter
  • 1 1/2 tspn Chilli powder
  • 1/2 tspn Cumin powder
  • 1/2 tspn Coriander powder
  • 1 tbspn Garam Masala
  • Salt (as per taste)
  • Water as required
  • Coriander leaves for garnishing.


SHORT RECIPE : 

In a Kadai - Add in Butter - Whole Garam Masala - Onion -Ginger Garlic Paste- Tomato paste - Spice powders - Salt -Fried Cauliflower and Potatoes- Coriander leaves - Garnish.


INSTRUCTIONS:

  1. Take a Pan add in some Oil, Once it is heated up add in the Potatoes and fry till they turn brown and crispy.
  2. To the same pan add in the blanched(cleaned and soaked in hot water for 5 -7 mins) Cauliflower and fry until crispy.
  3. In a Kadai add in the butter, Once the Butter is melted add in the Whole Garam Masala Spices.
  4. Now Add in the chopped Onions. Saute until the onions are slightly brown.
  5. To it add in Ginger Garlic Paste to it.Wait till the raw smell goes off.
  6. Now add in the Tomato Paste to it  and add in salt.
  7. Let the masala cook for 2 mins.
  8. Now add in the Chilli Powder, Cumin Powder, Coriander powder, Garam masala powder to it.
  9. Give it a good mix and wait till the oil seperates.
  10. Now add in some water and adjust the consistency. Now add in the fried Cauliflower and Potatoes.
  11. Let it boil for a minute or so and then add in the Coriander leaves.
  12. Put off the stove.
  13. Add in some Butter on top.


Yummy and Tasty ALOO GOBI MASALA is ready to be served with Naan or Chappathi.
