RECIPE NOTE:
Gulab jamun is among India's most popular desserts and it's often referred to as "Indian doughnuts." This delicious treat consists of soft, melt-in-your-mouth, fried dumplings that are traditionally made of thickened or reduced milk and soaked in rose-flavored sugar syrup.
Gulab jamun was first prepared in medieval India and was derived from a fritter that Central Asian Turkic invaders brought to India.Other theory claims that it was accidentally prepared by the Mughal emperor Shah Jahan's personal chef.
The word "Gulab" is derived from the Persian words gol (flower) and āb (water), referring to the rose water-scented syrup. "Jamun" or "jaman" is the Hindi word for Syzygium jambolanum, an Indian fruit with a similar size and shape, commonly known as black plum.
That was just an introduction about GULAB JAMUN. I actually couldnot get Khoya. But was craving to have GULAB JAMUN. So tried it using MILK POWDER. To my surprise it turned out really well. I actually surfed around many recipes, mix matched the ingredients and tried it my way.

RECIPE NAME : SOFT GULAB JAMUN
RECIPE TYPE : SWEET / DESSERT

RECIPE BRIEF:
SUGAR SYRUP
In a pan - Add sugar - Add in Water - Boil - Add Cardamom - Add rose syrup - Sticky consistency- Remove from flame.
JAMUNS:
In a bowl - Add milk powder - Maida - Baking soda - Ghee - Milk + Curd mixer - Knead together - Make a dough - Divide into portions - Make small balls - Heat oil in Pan - Add Balls one after one - Fry Till Golden Brown - Take it out - Immerse in Sugar Syrup.
INGREDIENTS:
FOR SUGAR SYRUP:
- 1 cup of Sugar
- 1 cup of Water
- 2 pods of Cardamon
- 1/2 tspn of Rose syrup ( optional)
- 1 cup of Milk powder
- 1/4 cup of Maida
- a Pinch of Soda
- 1 tspn of Curd
- 2 1/2 tbspn of Milk
- 1/2 tspn of Ghee
- Oil for deep frying
INSTRUCTIONS:
Prepare Jamun Dough:
- In a Bowl, Add in the Milk powder, Maida, Baking Soda. Seive it well.
- To it add in the Milk + Curd Mixture little by little until it forms a soft dough.
- Do not Knead it hard just give a light mix.
- Add in the Ghee and spread out well, So that the dough doesn't stick to your Fingers.
- Now make small balls out of it and keep it aside.
Prepare the Sugar Syrup:
- In a large pan, Add in the Sugar and Water and bring it to a boil.
- Let the sugar syrup boil until it becomes sticky.
- Add in the cardamom pods and the rose syrup to it.
- Put off the stove.
- In a kadai add in the oil for Deep Frying.
- Let the oil get heated. See to that the oil is not too hot nor low in temperature.
- Put a small piece of the dough and check for the oil temperature.
- Add in the Balls one by one and fry until golden brown.
- Remove the balls from the oil and add to the sugar syrup.
- Let it sit in the Sugar Syrup for about 2-3 hrs or overnight.
Yummy and tasty SOFT GULAB JAMUNS are ready to serve.
